Cocoa nibs are made by breaking the cocoa bean into its naturally grown segments. Raw cocoa nibs have not been toasted. They may be used in any beer or baking process you choose but are known to be great in Brown Ale, Porters and Stouts. Use them during the boil, mash or in the fermenter. Just remember they are a little bitter so keep that in mind when boiling.
